Fried rice with turkey, vegetables and soy sauce

A simple recipe for a large pan — enough for both lunch and dinner.
Ingredients
- turkey — 700 g
- onions — 2
- carrot — 1
- pepper — 1
- courgette — 1
- soy sauce plus a little honey or sugar (or teriyaki instead)
- vegetable oil
- rice
Method
- Start the rice: put it in a pan, cover with water to 2 cm above the surface of the rice and salt it. Bring to the boil over a high heat, covered, cook for 3–5 minutes, then turn the heat right down for another 10 minutes. Turn it off and leave it covered to steam.
- Dice the turkey and fry it in vegetable oil.
- Dice all the vegetables and add them in turn: onion, carrot, courgette, pepper.
- Add the soy sauce, stir and cook until the vegetables soften.
- Add a little honey or sugar for the Asian sweetness.
- Add the cooked rice to the turkey and vegetables and stir through.
Tips
- Sesame oil can be added for aroma and spring onion for serving.
- If it needs more salt, add another splash of soy sauce at the table.
