Method

  1. For the pastry, mix the flour with the sugar and salt. Add the cold butter, cut into pieces, and rub it into a crumb with your hands. Add the cold water and bring the dough together. Shape it into a ball and chill for an hour.
  2. For the filling, peel the apples and cut them into cubes.
  3. Put the apples in a bowl and add the sugar, cornflour, cinnamon, nutmeg and lemon juice. Mix well.
  4. Once the dough is cold, cut off a third and set it aside for the top.
  5. Cut a circle of baking paper for the base of the tin — lining it makes the pie easier to slice later.
  6. Roll the pastry out on baking paper, between two sheets, so that no extra flour is needed.
  7. Transfer the sheet to the tin and press the pastry against the sides.
  8. Add the filling.
  9. Roll out the reserved pastry, cut it into strips and lay them over the pie in a lattice.
  10. Sprinkle with sugar.
  11. Bake in an oven preheated to 180°C for 35–40 minutes, until the pastry is golden.
