Chocolate crêpe cake with orange cream

A chocolate crêpe cake with orange cream — it tastes rather like a milk slice.
Ingredients
For the crêpes
- milk 3.2% — 650 ml
- eggs — 4
- sugar — 50 g
- vanilla sugar — 10 g
- cocoa powder — 1–1.5 tbsp (more for a deeper chocolate flavour)
- butter — 50 g
- wheat flour — 200 g
For the cream
- mascarpone — 200 g
- double cream 33% — 250 ml
- cream stabiliser — 10 g
- icing sugar — 70 g
- orange — 1
For the chocolate glaze
- dark chocolate — 50 g
- butter — 25 g
- cream — 25 ml
Method
- Whisk the eggs, sugar and half of the milk. Add the sifted flour and cocoa and mix out any lumps. Heat the other half of the milk almost to boiling. Add the hot milk and the melted butter to the batter and whisk again.
- Cook the crêpes.
- For the cream, whip the cold cream with the stabiliser.
- Add the mascarpone, icing sugar, the zest of one orange and the juice of half an orange. Beat.
- Assemble the cake, spreading each crêpe with 2 tbsp of cream.
- For the glaze, melt the chocolate with the butter and cream. Pour it over the cake and decorate with berries.
