Lavash rolls with brined cheese, herbs and aubergine

A cold starter made with lavash: it can be prepared in advance and holds its shape well until serving.
Ingredients
- cream cheese (such as Almette) — 300 g
- herbs (coriander, parsley or dill)
- garlic — 1 clove
- red pepper — 1
- aubergines — 2
- brined cheese or feta — 200 g
- lavash flatbread
Method
- Slice the aubergines thinly and fry them in a pan.
- Finely chop the herbs and garlic.
- Mix the cream cheese with the herbs and garlic, add the brined cheese and stir.
- Slice the pepper.
- Spread the lavash with the cheese mixture, scatter over the pepper and lay the aubergine on top. Roll up tightly. Slice with a sharp knife just before serving.
- The rolls keep well: wrap them in baking paper and refrigerate until the next day.
