Cream the yolks with the softened butter, sugar and a pinch of salt, using a fork or a mixer.
Gradually add the flour, orange zest and spices and bring the dough together. Wrap it in cling film and chill for 20–30 minutes.
Roll out the dough on a floured surface to about 5 mm thick. Cut out the biscuits with cutters.
Bake in an oven preheated to 180°C for about 15 minutes, until golden.
For the icing, lightly beat the egg white, adding the icing sugar a little at a time. Beat until the icing is thick and flowing. A piping bag makes decorating easier.
