Soba noodles with beef, vegetables and teriyaki

Buckwheat noodles go well with teriyaki and soy sauce, and with beef or prawns. Carrot, pepper, onion and garlic are the vegetables to reach for.

Method

  1. The quantities are approximate and can be adjusted. Chicken works instead of beef, and other vegetables — courgette, for example — can be added.
  2. Cut all the vegetables and the meat into strips.
  3. Heat a pan with vegetable oil and fry the garlic.
  4. Add the beef and fry until almost done.
  5. Add the onion, then the carrot and pepper. Stir and cook until the carrot softens.
  6. Cook the noodles as directed on the packet — about 5 minutes. Drain and rinse them under cold water so that they do not stick together.
  7. Add the sauce to the vegetables and simmer. Use soy sauce instead of salt, to taste.
  8. Add the noodles to the vegetables and meat, toss and serve.
