Homemade poke bowl

A poke bowl is a base of rice with a sauce, vegetables and fish. Chicken, prawns or tofu work instead of fish.

Ingredients
For the base
- short-grain rice — 400 g
- rice vinegar — 80 ml
- sugar — 75 g
- salt — 20 g
Toppings (all optional)
- salmon, tuna, chicken or prawns
- sweetcorn
- nori sheets
- avocado
- edamame beans
- mango
- peanut sauce (ready-made)
- sriracha sauce (ready-made, hot)
Method
- Rinse the rice until the water runs clear.
- Cover the rice with an equal volume of water and cook it in a saucepan over a low heat for about 20 minutes. Do not salt it.
- For the seasoning, mix the vinegar, sugar and salt in another pan. Warm over a low heat until the sugar dissolves.
- Stir the seasoning through the rice.
- Prepare the toppings: boil the beans, slice the fish, avocado and mango.
- Put the rice in deep bowls, spoon over the peanut sauce and add the toppings. Finish with nori sheets and sriracha to taste.
